Cheese lovers are being offered a truly unusual gourmet experience this week – the chance to try British stilton soaked for weeks in one of Spain’s rarest Pedro Ximenez sherries.
From Friday, May 8, diners at La Bodega del Cantinero in San Pedro de Alcantara will be able to sample portions of the unique cheese creation after owner Alberto Morito spent nearly three weeks bathing the stilton in an extremely rare 1946 Pedro Ximenez.
According to Alberto, the historic sherry is so exclusive that just 825 bottles were ever produced.
He told The Spanish Eye the bottles are now valued at well over €1,000 each and are considered so well-preserved they could potentially last until 2060.
The stilton has reportedly been soaking since April 19, slowly absorbing the dark PX sherry’s colour, sweetness and intense aroma.
Photos shared by the restaurant show the deep-coloured cheese sitting beneath the vintage bottle after weeks of infusion.
‘Incredible colour and aroma,’ Alberto wrote alongside the images announcing the launch.
The cheese will officially be opened and served to customers from Friday in 200g portions until it sells out.


Pedro Ximenez, often shortened to PX, is one of Andalucia’s most prized dessert wines and is famous for its syrup-like texture, raisin flavours and rich sweetness.
Pairing it with strong blue cheeses such as stilton is already considered a classic gourmet combination – but Alberto’s approach takes things a step further by directly soaking the cheese itself in the decades-old sherry.
The one-off creation is expected to attract foodies and wine lovers from across the Costa del Sol eager to try what is likely one of the most unusual tapas experiences currently available in Marbella.
